This recipe uses TEXMEX as the protein base for a rich and flavorful meatless chili.

- (Optional) Sauté one chopped onion in a large pot with a bit of oil (5 min).
- Add one can of diced tomatoes (796 ml), one can of red or black beans (540 ml, un-rinsed to thicken the chili with the aquafaba), the GROUNDED TEXMEX pouch, and 1 cup of water. Stir and bring to a boil.
- Reduce heat and simmer for 20 minutes. Add salt and spice to taste. Serve your veggie chili hot with your favorite toppings (rice, guacamole, corn, chips, vegan sour cream, shredded cheese, etc.).
