DRIED TOMATO AND PECANS SANDWICH

INGREDIENTS

A. FOR FOOD PROCESSOR
100g pecans
2 dates
7 dried tomatoes
1/2 pepper of the color of your choice
2 tbsp olive oil

B. STOVE
1 cup Original Grounded
1/2 cup hot water
1 tbsp dark soy sauce
1 tbsp maple syrup
1 onion, finely chopped
1 tbsp smoked paprika
2 tbsp olive oil

C. TO SERVE
8 slices of bread
Vegan mayonnaise
Balsamic reduction
Lettuce of your choice
Cucumber slices

PREPARATION

A. HYDRATE THE GROUNDED

  1. Hydrate the OG: Mix the Original Grounded TVP with 1 cup hot water and soy sauce.
  2. Stir well and let stand for about 5 minutes.

B. PREPARE THE PECAN FILLING

  1. Meanwhile, place pecans, dates, sun-dried tomatoes, half the bell pepper and olive oil in a food processor.
  2. Blend until the texture resembles ground meat.

C. COOKING ONIONS

  1. Heat 2 tablespoons of olive oil in a non-stick frying pan.
  2. Add the onion and sauté until translucent.

D. COOKING GROUNDED

  1. Add the Grounded mixture to the pan and cook for about 3 minutes.
  2. Stir in the pecan mixture and cook for another 3 minutes. If the mixture seems too dry, add a little olive oil.

E. ASSEMBLE THE SANDWICH

  1. On the bread of your choice, spread mayonnaise, add salad and cucumber slices, then garnish with the Grounded mixture. Add a balsamic reduction to taste.
  2. Serve and enjoy!
