BANANA BREAD

INGREDIENTS

2 very ripe bananas
1 tbsp lemon juice
1/2 cup vegetable oil
1/2 cup vegetable milk
1 cup pressed brown sugar
1 cup MINI Original Grounded

1 cup all-purpose flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 cup fresh or frozen raspberries
1/4 cup chocolate chips (optional)

1 tbsp vegetable oil for oiling the loaf pan

PREPARATION

1. Preheat oven to 350°F / 180°C.

2. Oil a 9 x 5-inch (23 x 13 cm) loaf pan.

3. In a bowl, mash the bananas. Add the lemon juice, vegetable oil, non-dairy milk and brown sugar and beat with an electric mixer until smooth. Set aside.

4. In another bowl, mix together flour, salt, baking powder, baking soda and GROUNDED.

5. Add the dry ingredients to the wet ingredients and mix with a spoon.

6. Add the raspberries and the chips and mix with a spoon.

7. Spread the dough into the loaf pan. Bake for about 75 minutes or until a knife inserted in the center comes out clean.

8. Leave to stand for 15 minutes, unmold and serve.
